This easy recipe is one of my current favorite main-dish salads, I’m completely addicted to it! It is so delicious, easy, tastes great room temperature or cold, has so much flavor and is incredibly satisfying too!
I thought it was worth sharing the recipe because I think it will make a phenomenal side dish or even a delicious and hearty vegan entree for Thanksgiving or the holidays as well! This recipe is even better a day or two after making it, which is a plus any time of year, but especially for the holidays.
Need to make this a flavorful and exciting vegan or paleo-friendly? Simply omit the blue cheese.
